Cheesy Chicken Tator Tot Casserole

I was in a rush for dinner the other night and we were having a house full of company the next day so I was trying to create as little of a mess as possible! I vigilantly searched Pinterest for something easy (that I already had all the ingredients for) and lo-and-behold I found this amazing recipe. Only I didn't quite have all the ingredients so I decided to experiment and below is what I came up with. This is not remotely considered a healthy meal but definitely falls into the category of comfort food. It's it easily assembled with 1 pan, a spoon, a knife, and a measuring cup. I served this with steamed peas and fruit.

Cheesy Chicken Tator Tot Casserole

Ingredients
1 bag of tator tots
2 - 3 chicken breasts
1-2 cups cheese (I used two)
1 bunch green onions
1 can cheddar cheese soup
1/4 - 1/2 cup milk (I eye balled it)
Salt
Pepper

Instructions
Pour 1/2 of your bag of tator tots into your baking dish. I used my Pampered Chef Deep Covered Baker. Sprinkle half of the cheese over your tator tots. Chop green onions and sprinkle over cheese. Dice the uncooked chicken breast at this time and add on top of green onions. Repeat all except the chicken layer. Mix can of cheddar cheese soup, salt, pepper, and milk and stir until fairly smooth. Pour over casserole. Cover and bake for 1 hour at 350 degrees.

Verdict: My husband said "please make this again!"
